Ragi Coconut Chocolate Cookies

Ragi – It is a wonder grain which is rich in proteins and minerals, also an ideal source of protein for vegetarians. Combined with Coconut and Chocolate, we have made some yummy cookies

  • 1/2 cup Wheat Flour
  • 1/2 cup Ragi Flour (dry roast and cool it before use)
  • 1 tbsp Cocoa Powder
  • 3 tbsp Coconut Powder
  • 1/2 tsp Baking Powder
  • 1/2 – 3/4 cup coconut Sugar- according to you preference
  • 1/2 cup Unsalted Butter
  • 4-5 drops Vanilla Essence
  • 1-2 tbsp Milk as per the requirement
  • Chocochips/chocolate chunks/ coconut flakes for adding on the cookies

Beating

  1. Beat butter and sugar till it becomes very light and frothy, finally add some vanilla essence – ( ensure you do this step properly as the final texture of cookies varies if you don’t beat the butter sugar mix properly )
  2. Finally add in few drops of vanilla essence – ( Vanilla essence is always added either while beating or at the end and never with the flour – as it forms lumps )

Mixing Flours

  1. Add flours – ragi flour (roasted ) + wheat flour + cocoa powder + desiccated coconut powder + 1/2 tsp baking powder

Shaping the Cookies

  1. Grease your hands with a little butter and take a ball of dough and give them a dome shape ( don’t flatten it ) Add chocochips / chocolate chunks/ roasted coconut flakes according to your choice

Baking

  1. (150 degrees if you are baking in OTG & 180 degrees if you are baking in Microwave with convection )

  2. Bake the cookies at 150 degrees for 15-20 minutes
  3. Cookie test -( let the cookies sit in the baking tray while its a little warm and soft to touch )

  4. DONT let your cookies turn firm in the microwave/ OTG take them out while they are a little soft in the centre and the crust at the base is light brown – They will firm up as it rests for a while

If you are unable to shape the cookies and if the dough seems too sticky, add a tsp of wheat flour to bind the dough well.
