This vanilla cake recipe is delicious, dense & moist cake that I simply can’t refuse anyway anytime. It is my all-time favourite and no-fail recipe.

You will see here a super simple and easy to follow recipe which will leave you with a super moist and soft sponge.

You can have it plain or ice it with whipped cream and turn it into a layered cake filled with cream.

It’s one bowl versatile recipe which can be converted into different flavours by adding essence of your choice to it or you might even add dried fruits and nuts of your choice to have it as a tea time cake.

Recipe For Eggless Vanilla Sponge Cake

Ingredients:

  • 125 grams Maida
  • 60 grams unsalted butter
  • 200 grams condensed milk
  • 25 grams Sugar
  • 2.5 grams Baking powder
  • 1.5 grams Baking soda
  • 100 ml drinking soda – Kinley/Sprite or Milk 

Method:

  • Prepare the required cake tin by greasing, dusting and lining the pan with parchment paper.
  • Cream butter and sugar together till light and fluffy
  • Add condensed milk and vanilla essence.
  • Sieve the flour with baking powder and baking soda & fold in with the creamed mix.
  • Add drinking soda little by little and mix evenly.
  • Pour the batter on the greased pan and level it and tap it on the counter top to remove the air bubbles
  • Bake at 180 degrees for 25- 30 minutes in preheated oven or until done and is firm when you touch the centre

Few pointers to be kept in mind while baking this recipe – Always take all the ingredients at room temperature and measure all the ingredients as per the recipe instructions as cooking is art but baking is science.

Looking for Healthy Wheat Flour Brownie recipe?? Imagine having a recipe that has easy to find ingredients and even easier to bake, while keeping it healthy.

These are one pot brownies which can be made in jiffy to satiate your chocolate craving while staying healthy and it doesn’t take longer than 45-50 minutes from assembling the ingredients to baking.

You won’t be able to make out the difference in taste and texture inspite of being made with atta (wheat flour) and jaggery.

By following this recipe, you will get a cakey texture and not flaky or gooey texture that is usually associated with brownies.

Recipe for Healthy Wheat Flour Brownie

Ingredients

  • 1 cup Wheat flour 
  • 1/4 cup cocoa powder
  • 1 cup jaggery powder/brown sugar
  • 1 tsp baking powder
  • 1/4 cup oil 
  • 1 cup milk 
  • 2 tbsp chocochips/Walnuts 

Method

  • Sieve the dry ingredients wheat flour, baking powder, cocoa powder, salt
  • In a bowl take oil, Jaggery powder/ sugar, milk and whisk properly till jaggery powder dissolves completely
  • Now add the dry ingredients to wet ingredients and mix 
  • Add the chopped walnuts/chocolate chips
  • Transfer the batter in a tin which is greased, dusted and lined with parchment paper or line it with a foil 
  • Preheat the oven at 180 ℃ and bake at the same temperature for 25-30 minutes or until it leaves its sides and baked well in the centre 
  • Cool it before you un-mould it from the tin and ENJOY!!

How to Make Pav Buns Recipe

 

“It’s good to know what while fads come and fads go, bread remains the world’s favourite staple.”

This recipe of Pav Buns is specially for those who are currently in self-isolation as a result of the pandemic and can put their time to good use by developing a hobby and that’s – Baking!!

Baking in times of COVID-19 has been quiet therapeutic and stress buster for me as I throughly enjoy baking and the transformation of ingredients and their end result. Home made pav buns or as we call it laadi pav or dinner rolls is a perfect accompaniment to that yummy pav bhaaji or a vada pav or even dabeli.

Its super simple recipe to make with a handful of ingredients and the same recipe can be twisted and made in 4 -5 different forms.

Few pointers to keep in mind before baking bread

  • Yeast – Do check out before whether your yeast is active or not before assembling the ingredients
  • Hydration – Dough needs enough quantity of water, if water content is less your bread might turn out dry and hard
  • Oven Temperature – Each oven works in a different manner, so adjust the temperature accordingly

How to Make PAV BUNS

Yield : 6 Buns 

Ingredients

  • Maida: 2 cups
  • Yeast: 1 tsp
  • Milk powder: 2 tsp
  • Salt: 1 tsp
  • Sugar: 1 tsp
  • Oil/melted butter: 3 tbsp
  • Water/milk: 1+1/2 cup (slightly warmer than lukewarm)

METHOD

  • Combine Flour, Yeast, Salt and Milk powder in a bowl.
  • Add little quantity of water and start kneading initially the dough will be sticky but as its kneaded it will form into a smooth dough.
  • Finally add oil/butter and knead the dough for 10-15 minutes and keep it aside for the first rise/fermentation.
  • Keep this dough in a big oil greased bowl for first proofing.
  • Cover the bowl with cling wrap and wait for it to double in size (this might take approx 40-45 minutes)
  • After first proofing, take out the dough on clean oil greased kitchen counter and gently punch it.
  • Knead it for a minute and divide the dough to prepare buns. Keep greasing your palms with oil to roll these buns smoothly like a ball between your palms and keep them in a lightly oil greased baking tray, keeping some distance in between because they are going to puff up
  • Keep it aside for the second proofing
  • Meanwhile pre-heat oven at 200 degrees for ten minutes before second proofing ends.
  • Brush up buns with milk and bake them at 200 degree for 15-20 minutes (both the coils on) till they are nicely brown on the top
  • Remove the tray from the oven and immediately brush them with butter and ENJOY pillow soft buns with hot pipping Bhaaji or in form of Vada Pav!!

NOTE: You can shape the same bread in different shape as well – knot shape or round shape or they can be flavoured with pizza seasoning /dry herbs
